A Proper Pommery Pairing

Back in May I started a new collaboration with Pinch My Spice and Moishe Mayer that I just love: #WineandspicE. WE. Three professionals—one devoted to food, another to wine, and me to everything—creating content that has been overwhelmingly well-received.

We do a monthly kosher food and wine pairing in which Chef Mechy makes his take on a classic dish while Moishe pours the good stuff. I am the mastermind, so to speak, making sure we have a proper pairing, filming both main footage and b-roll, always preoccupied with quality sound, producing, editing, and publishing.

When we were brainstorming about the perfect dish for Rosh Hashanah, I was incessant on incorporating Champagne to bring in the new year.

In July 2023, I met up with the Champagne Pommery team in Manhattan to taste a kosher run of their Brut Royal. I called Moishe and said, “Buy it all.” We’ve had a lot of fun with it since, but this new pairing is my favorite. So yeah, check out the recipe if you want to create an impressive feast!
